Cutting the Curds

Once the milk has coagulated, it is time to start the process of separating the curds from the whey. The first step is to cut the curds into cubes.

Once a "clean break" is achieved -- that is the curds break cleanly when cut with a knife or poked with your finger -- it is time to start the process of separating the curds from the whey. The first step is to cut the curds into cubes. This is hard to do with home equipment, so cut the curds into 1/2" columns, then cut those diagonally to break them up further.
