Tagliatella with Bacon Sauce

Ingredients:
8-10 oz spinach noodles
1/4 cup olive oil
1 medium onion, finely chopped
1/4 cup non-smoked lean bacon, diced
1 28 oz can crushed, Italian-style
tomatoes
salt & freshly ground pepper
1/2 cup freshly grated Parmesan

Instructions:
Heat oil in medium saucepan. Add onion and sauté over medium heat until pale yellow. Add bacon and sauté until lightly colored. Press tomatoes through a food mill to remove seeds and create a smooth sauce; stir into saucepan.

Simmer uncovered 25 to 30 minutes or until sauce reduces to a medium-thick consistency. Season with salt and pepper.

Cook noodles, drain. Toss noodles with a small amount of sauce (enough to cover) and toss gently. Serve immediately with Parmesan cheese.
