Bresaola is a great cured meat. it is made from beef, or also, quite commonly in Italy, horse or donkey. Basically a very lean piece of meat (most commonly beef, especially if bought commercially) is salt cured with spices, then dried.

Bresaola

Eye of round         1537 g       100%
Salt ( Kosher)      78 g             5%
Sugar               15 g           1%
Black pepper       7.6 g         0.5%
Fresh rosemary     3.5 g         0.25%
Juniper berries     1.7 g         0.1%
Dry thyme         1.5 g         0.1%
Cinnamon         0.8 g         0.05%
Clove               0.4 g         0.025%

Very nice!  Gotta love Bresola. I’ve only made it once but was pleased with the results. I used a 5lb eye of round. My wife didn’t like it though because I hung it in the basement bedroom to dry in the same room as some of her clothes. Needless to say the clothes took on a slight “meat” smell for a while…..

after u rub the spices put eye of round in plastic bag in fridge and leave it for a week, turning it daily… then dry it
