replacing cheddar with havarti

I’ve included havarti in my cheese platter for years and it never fails that someone remarks how creamy it is. So recently I tried using it when making Mac & Cheese. I was pleasantly surprised at both the flavor and how well it melted. Dofino (http://dofinousa.com) makes the havarti I use. I prefer their havarti w/ jalapeno.  Has anyone else tried replacing cheddar with havarti?

I used to use it allot and it was Dofino. Would melt it to make notchose smile
