Hey Bro, haven’t heard from you in a very long time.  Sorry to say that the forum has slid into major inactivity.  We need to see what we can do to revive it.  Have you been doing anything yourself?

I guess this forum is one of best on the www.

Very friendly from owner to all members.

Am so proud to be in it. And ready do all needed to revive it.

Actually am into new hobby. Bonsai smile

Was doing some cured meats now and then. And still have mature 4 years old cheeses I made before.

Been away from cheese making for a while - mainly the pressure of work confused but also some good things, like visits from grandkids and old, old friends, and trips to see other old, old friends. grin

Last weekend I finally, finally got back in the groove, turning 16l of the wet white stuff into a round of Caerphilly - the cave is empty bar a Romano that won’t be ready to open till nearly Christmas, so I needed something that wouldn’t have to age too long. (Said old, old friends kindly brought out a fresh supply of cultures and wax from the UK, but also gobbled up the last of me Wensleydale and Cheddar (which, after ageing for 8 months, was dee-lish-uss!)

The fresh supply of cultures includes a little pot of penicillin candidum, which I think is what I need to have a go at Camembert, when I pluck up the courage to actually encourage mould to grow on a cheese! gulp

Before that though I intend to make use of the herbs in the garden to make another Sage Derby, see if I can get it to look greener this time.

Hey Denise - good to hear you back on the boards.  I guess everyone’s been into other things for a while; but it’s great to see y’all comin’ back.  Don’t be a stranger.
