Watched a UK episode on food and was surprised to hear about a major problem with environmental toxicity from dumping Acid whey into the water systems. ney York being the highest polutant,

If they’re dumping that much they’re missing out on a great opportunity - to make and sell ricotta!

Haha, an other funny coincidence that I read this post just after my return from a couple of days working in Norway.
There I tasted Brunost, the brown Norwegian cheese that is made from whey or a mix of whey, milk and cream.
It’s slowly cooked (6-12 hours) so the milk sugars will caramelize…
The one made from cows whey seems to be called myost and the one from goat gjetost.
Anyone here made it?

This is the first I have heard of Brunost.  What sort of cheese is it?  Soft, hard, aged???  Mild, sharp??

Well, did you hear about Gjetost or Geitost or Mysost? Those are different names, also depending on the type of milk (Mysost is from cow milk, Geitost or Gjetost from goat) and Brunost is the name for both, meaning “Brown cheese”.
You can find a description here. It seems that Ricky Carrolls book mentions it…
