Page flipped while making Cheddar, used Brick cooking instructions.

It is waxed and ageing. I was going to wait a couple of months then open it up. Since I had already messed up I decided to smoke it in my smoker before I waxed. Would you say I will get a different cheddar or some unknown (hopefully edible) cheese?

I’m not familiar with the cook time/temp for Brick; but you’re going to end up with something different.  Yes, it will be edible.  And you may really like it.  That’s how new recipes are created - by either purposeful or accidental changes.  I guess in a couple months we’ll find out if it was a good or a bad accident.
