Coming from Southeastern New Mexico, we put eggs on everything from steak, to pancakes, to enchiladas. And yes they must be stacked, not rolled. It is a New
Mexico tradition to put eggs on stacked enchiladas, but not here is Texas. In
fact it is even hard to find them stacked and not rolled. I have even been told
that they don’t have any eggs! There is one place in Aledo, TX that does
understand New Mexico. Their #11 special is Enchiladas New Mexico style, stacked with two eggs on top. If you are ever in Artesia, New Mexico, you must stop at the La
Fonda Mexican Food Restaurant and have enchiladas with an egg.
