An extract from the Annatto seed, a little goes a long way! Add a few drops of this coloring agent dissolved in distilled water to your cheese (always before the rennet) to add an attractive yellow color to your Cheddar cheeses.
This coloring agent is very concentrated and will stain, especially if brought into contact with salts, so be very careful!
