has anyone made Dry Gouda or Jack cheese?

Visiting my sister in CA, we went to cowgirl creamery (go if you have the chance - we eat the cheese before we left the place)  they had both dry gouda and dry jack.  How long would you age them and do you wax them?

Gouda u wax the jack cheese normally no. Will be cracking my Gouda, its about 6 months old.

my goudas are three months and i will wait :
1- one with dried garlic and black papers.
2- with only black papers
3- just gouda

all out of 17Kg of cow fresh raw milk
