Great day for cheese making

I got up late (for me) this morning - about 5 AM; and it looked like a really great day to make cheese.  Although it’s the beginning of gardening season; it was rainy and a wee bit cool.  So, about 7 I headed to the dairy.  As providence would have it I arrived just as another cheese maker was driving up.  He was getting 75 gallons of milk!!!  I would love to have talked to him about his operation; but I don’t speak his language.  Must be quite an operation.  Anyway, I bought my paltry 4 gallons and whipped up a Colby - my wife’s favorite.  It went quite well, and just as I got it into the press, the sun came out.  So now, as the cheese is in its final press, I can spend the rest of the day working outside.

How is it with all you cheese makers?  Anything going on???

Not much here except finaly looks like spring here and buds and birds are out.
Still in a slump in cheese making.
Hope your Colby comes out great !
