RE-DRESSING CHEESE AT PRESSING

When turning the cheese as called for in the pressing process, do you always redress the cheese with clean sterilized cheesecloth, or do you just rewrap it with what you removed in order to flip the cheese?

I used the same one, and just give it a quick wash inbetween re-dressing xxx

If your talking about the initial pressings , u use the same one. I usually use 2, each flip I flip it into the other cloth, its easier then trying to balance it to get it flipped back into the original cloth. If your talking about wrapped cheese in aging then its the same for life and becomes part of the rind.
