I waxed this cheese and moved it to the cheese fridge in the basement on 1/4/04. It had some pretty back cracking in the forming rind.

We cut a piece out of this cheese yesterday to have after dinner. It is very good. A nice consistency to the cheese. And, the flavor was fantastic. The cheese was mildly flavored with sage, until you chewed on a sage leaf, then it was more intense. Definitely a great cheese and worth making!
